Considering that the average restaurant produces about 100,000 lbs of garbage per year (273 lbs a day on average!) what this restaurant has accomplished is quite a feat.

All the meat and produce is raised and grown eco-friendly and locally, so the restaurant is not dependent on national (and in many cases international) supply chains that can break down for a multitude of reasons.

And all the while they’re profitable.
